The Mazara del Vallo Red Prawn confirms its position as one of the most appreciated seafood products among Italy’s quality restaurant sector. This emerges from a B2B market survey commissioned by OP Blue Sea del Gambero Rosso di Mazara del Vallo, carried out across the medium-high and high-end restaurant channel, with the prevailing involvement of Michelin-starred restaurants and qualified operators in signature cuisine.

The survey, developed within the framework of the Production and Marketing Plan of the Producer Organisation supported by the Italian EMFAF National Programme 2021–2027, collected 93 valid interviews from an initial database of 410 restaurants, including 387 Michelin-starred establishments. The sample covered the entire national territory, involving 36 restaurants in Northern Italy, 25 in Central Italy and 32 in Southern Italy and the Islands.

The results confirm the recognition of the Mazara del Vallo Red Prawn as a high-value product, chosen by chefs for its gastronomic quality, aromatic intensity, sweetness of the flesh, culinary versatility and strong territorial identity. Raw consumption, in particular, is one of the most appreciated uses, as it enhances the product’s organoleptic characteristics and reinforces its premium positioning.

Alongside this strong appreciation, the survey highlights a very clear need expressed by quality restaurants: greater guarantees on the actual origin of the Mazara del Vallo Red Prawn, its traceability and the recognisability of its supply chain.

Several operators interviewed pointed out that, although they purchase products marketed with reference to Mazara, it is not always easy to obtain fully clear information on whether the crustacean actually comes from the Mazara fleet. This issue does not concern commercial transparency alone. It also affects the gastronomic and narrative value of the product. For chefs, being able to tell the origin of a raw material with certainty is becoming increasingly important in shaping the identity of a dish and in the relationship with the final customer.

This is precisely the area in which OP Blue Sea del Gambero Rosso di Mazara del Vallo intends to strengthen its role. As a Producer Organisation, the OP represents a collective player within the production chain and is working to build tools capable of making the product landed by its member fleet increasingly identifiable, traceable and recognisable on the market.

“For us, this result is very important,” says Maurizio Giacalone, President of OP Blue Sea del Gambero Rosso di Mazara del Vallo, “because it confirms that the Mazara del Vallo Red Prawn is already recognised by chefs as a product of excellence. At the same time, the survey clearly shows a demand for stronger guarantees on origin and traceability. The OP was created precisely to strengthen the role of producers, enhance the work of the fleet and build a more transparent, qualified and recognisable commercial pathway.”

The survey also provides useful indications on how the product is used in restaurants. The Mazara del Vallo Red Prawn is mainly used in raw preparations, seafood starters, pasta dishes, tasting menus and high-end gastronomic proposals. Intermediate sizes are particularly appreciated for their balance between gastronomic yield, versatility and economic sustainability, while larger sizes maintain a central role in preparations with greater visual and taste impact.

The data also confirm that quality restaurants do not consider the Mazara del Vallo Red Prawn as an ordinary raw material, but as an identity product, capable of representing a territory, a fishing fleet and a production tradition. For this reason, origin, traceability and consistent quality become decisive elements in strengthening its market value.

The path launched by the OP is part of a broader strategy to enhance the commercial value of the product sourced from its member fleet. The objective is to progressively build an OP-led channel for the valorisation of the Mazara del Vallo Red Prawn, based not on simple commercial intermediation, but on the ability to guarantee identity, origin, traceability and qualitative consistency.

From this perspective, the added value of the OP lies not only in product promotion, but also in the possibility of representing producers in an organised way, strengthening the link between the Mazara del Vallo fleet, quality restaurants and the final consumer.

To support this path, the OP is also working on integrated communication, promotion and identity-building actions, with the aim of presenting the Mazara del Vallo Red Prawn not only as a gastronomic excellence, but also as the result of the work, expertise and history of the fishing community that brings it to the market.

The survey therefore confirms a clear perspective: the Mazara del Vallo Red Prawn is already recognised by Italy’s quality restaurant sector as a product of excellence. The new challenge is to strengthen its origin, traceability and identity through a pathway led by the Producer Organisation and built around the authentic value of the Mazara fleet.
